It’s that month when love is in the air and it feels like this year we need to show even more love after the trials and tribulations of a world pandemic. We obviously cannot go out and celebrate but what we can do is cook our loved ones a special meal at home to show that we can.

We have come up with a few recipe ideas to help give you some inspiration;

Starters

Pani Puris – This deep-fried Indian street food makes a great party snack – crisp rounds of bread filled with chickpeas and potato, drizzled with a herb and spice water

Grape and Rosemary Foccacia – With this easy bread, there’s no need to knead. The slow rise allows the gluten to develop naturally and the sticky, wet dough helps produce focaccia’s characteristic air bubbles –  great served warm with soft goat’s cheese

Grilled Peach Panzanella – This refreshing salad is a new take on an Italian classic, with a touch of sweetness.

Mains

Whole Roasted Cauliflower with Zaatar Spice and Tahini Sauce– a healthy vegan meal bursting with Middle Eastern flavours. Easy and delicious! Serves 2 perfectly!

Spicy Chinese Eggplant with Szechuan Sauce with chilies and peanuts– serve or black rice or rice noodles for a tasty, easy vegan dinner!

DATE NIGHT Vegan Alfredo for two, tossed in a delicious cashew (or hemp) cream, with sautéed mushrooms, Meyer lemon zest and a secret ingredient that gives this extra complexity and depth. Can be made in under 30 minutes!

Sheet-PanChipotle Portobello Tacos – smoky, spicy and “meaty”, these VEGAN tacos are sure to satisfy even the most diehard meat-lovers!  Make them in 30 minutes! Sooooooo Tasty! All plants!
