Quick and Easy Basil, Avocado Pasta – I am always one for a pasta because 9 times out of 10 you can enjoy it hot or cold and as long as you have some good tupperware, you can pop it in your bag and take it to work. This recipe from Nourish Your Glow does look super easy and delicious and I am a huge fan of ALL the ingredients. I love how avocado can give the feeling of a creamy style sauce and the basil will make you feel like your eating pesto!

Easy Vegan Fried Rice – You’ll notice I am going for the recurrent theme of easy recipes because I don’t know about you but I do not have a whole lot of time during my day to stop and create a cordon bleu lunch. I adore a good Chinese and wasn’t sure how much I’d be able to enjoy on Veganuary but this dish from Minimalist Baker is going to give me all the yummy feels!

Vegan Buddha Bowl – I know it might be a little predictable but I could NOT do a Vegan lunch recipe round-up without a Buddha bowl. If you have never heard of a Buddha bowl then you must have been hiding in a non-digital cave somewhere because they are very “in.” This Vegan bowl from Well and Full looks delicious – I love quinoa and I really liked baked spiced chickpeas. To me, depending on the spices you use, they are kind of like Bombay mix which I used to just sit and devour. This is one Buddha bowl but of course you can put anything on yours… as long as it’s vegan!

Grilled Zucchini Humus Wrap – What happened to keeping it simple with a good old fashioned sandwich? Well how about this super delicious looking wrap from Maebells. Sometimes you just want to bite into something and this looks good enough to bite into several times. I really love zucchini or should I say courgette as I’m English and really love a good strong garlic humus. I better make sure I have some breath mints to hand for after on this one. Easy to wrap in foil and take to work or on the go with the kids!

20 Vegan Packed Lunches – If you’re still unsure of what to have and know that you’ll be needing to pop it into a lunchbox for on the go, why not try one or all of these 20 recipes from Wallflower Kitchen.
